Yule log ingrediants • butter , for greasing • 5 eggs • 140 g light muscovado sugar • 100 g self-raising flour • 25 g good quality cocoa powder such as Green & Black's or Oxfam Fairtrade • caster sugar , for dusting • FOR THE ICING AND FILLING • 285 ml/9½fl oz carton double cream • 450 g fondant chocolate , such as Lindt Lindor • icing sugar , for dusting Meathod • Heat oven to 190 C/fan 170 C/gas 5. Butter and line the base and sides of a 30 x 35 cm Swiss roll tin with baking parchment. • Separate the eggs, putting them into two large mixing bowls. Add the sugar and 2 tbsp water to the egg yolks. Using an electric whisk or tabletop mixer, whisk the sugar and yolks for about 5 mins until the mixture is light in colour and thick enough to leave a trail when the whisk blades are lifted. Sift in the flour and cocoa, then fold in lightly, using the whisk blades or a large metal spoon. • Using a clean whisk, beat the egg whites until they are stiff, then fold into the cake mixture in three batches, again using the blades to preserve as much air as possible. • Pour the mixture evenly over the prepared tin, then carefully spread to the edges. Bake for 10 -12 mins, or until the cake feels firm to the touch. Put a large sheet of baking parchment on the work surface and sprinkle lightly with caster sugar. Turn the cake out onto the parchment and peel off the lining paper. Cover with a clean tea towel, then leave to cool completely. Trim a little cake from all the edges, then score along the edge of one of the long sides of the cake and roll up from there, using the paper to help you, rolling the paper inside the cake. • To make the icing and filling, bring the cream to the boil in a small pan, remove from the heat, then break in 400 g of the chocolate. Stir until it is melted and smooth. Leave to cool, then chill until it is spreadable, about 1 hr. Chop the remaining chocolate, spoon a third of the icing into a bowl, then stir them together to make the filling. • Carefully unroll the cake, then spread all the filling over to within 2 cm of the edges. Roll up the cake again using the paper to help you, then set on a board. • Cut a thick diagonal slice off one end of the cake. Transfer the larger piece of cake to a board or flat serving plate. Spread a little icing over cut side of the small piece of cake and fix it to the large roll to make a stump (as photo). Spread remaining icing over the cake, then dust with icing sugar to serve.

Ultimate choc cake ingrediants • 200 g good quality dark chocolate , about 60% cocoa solids • 200 g butter • 1 tbsp instant coffee granules • 85 g self-raising flour • 85 g plain flour • 1⁄4 tsp bicarbonate of soda • 200 g light muscovado sugar • 200 g golden caster sugar • 25 g cocoa powder • 3 medium eggs • 75 ml buttermilk (5 tbsp) • grated chocolate or curls, to decorate meathod • Butter a 20 cm round cake tin (7. 5 cm deep) and line the base. Preheat the oven to fan 140 C/conventional 160 C/ gas 3. Break 200 g good quality dark chocolate in pieces into a medium, heavy-based pan. Cut 200 g butter into pieces and tip in with the chocolate, then mix 1 tbsp instant coffee granules into 125 ml cold water and pour into the pan. Warm through over a low heat just until everything is melted - don't overheat. Or melt in the microwave on Medium for about 5 minutes, stirring half way through. • While the chocolate is melting, mix 85 g self-raising flour, 85 g plain flour, ¼ bicarbonate of soda, 200 g light muscovado sugar, 200 g golden caster sugar and 25 g cocoa powder in a big bowl, mixing with your hands to get rid of any lumps. Beat 3 medium eggs in a bowl and stir in 75 ml (5 tbsp) buttermilk. • Now pour the melted chocolate mixture and the egg mixture into the flour mixture, stirring just until everything is well blended and you have a smooth, quite runny consistency. Pour this into the tin and bake for 1 hour 25 - 1 hour 30 minutes - if you push a skewer in the centre it should come out clean and the top should feel firm (don't worry if it cracks a bit). Leave to cool in the tin (don't worry if it dips slightly), then turn out onto a wire rack to cool completely. • When the cake is cold, cut it horizontally into three. Make the ganache: chop 200 g good quality dark chocolate into small pieces and tip into a bowl. Pour a 284 ml carton of double cream into a pan, add 2 tbsp golden caster sugar, and heat until it is about to boil. Take off the heat and pour it over the chocolate. Stir until the chocolate has melted and the mixture is smooth. • Sandwich the layers together with just a little of the ganache. Pour the rest over the cake letting it fall down the sides and smoothing to cover with a palette knife. Decorate with grated chocolate or a pile of chocolate curls. The cake keeps moist and gooey for 3 -4 days.

Sponge cake Ingredients • 225 g/8 oz butter or margarine, softened at room temperature • 225 g/8 oz caster sugar • 4 medium eggs • 2 tsp vanilla extract • 225 g/8 oz self raising flour • milk, to loosen method • Preheat the oven to 180 C/350 F/Gas 4. • Grease and line 2 x 18 cm/7 in cake tins with baking paper. • Technique: Greasing and lining cake tins • Watch technique 0: 33 mins • Cream the butter and the sugar together in a bowl until pale and fluffy. • Technique: Creaming butter by hand • Watch technique 0: 50 mins • Beat in the eggs, a little at a time, and stir in the vanilla extract. • Fold in the flour using a large metal spoon, adding a little extra milk if necessary, to create a batter with a soft dropping consistency. • Technique: Folding • Watch technique 0: 35 mins • Divide the mixture between the cake tins and gently spread out with a spatula. • Bake for 20 -25 minutes, or until golden-brown on top and a skewer inserted into the middle comes out clean. • Remove from the oven and set aside for 5 minutes, then remove from the tin and peel off the paper. Place onto a wire rack. • Sandwich the cakes together with jam, lemon curd or whipped cream and berries or just enjoy on its own.

Lemon fondant cake Ingredients • 350 g very soft butter • 350 g caster sugar , plus 1 tbsp • 250 g self-raising flour • 3 eggs • 100 g ground almonds • 150 ml pot natural yogurt • 2 lemons , zest and juice • TO ASSEMBLE & DECORATE • 12 tbsp lemon curd • 500 g pack marzipan • 500 g fondant icing sugar , sieved • yellow, pink and green food colouring Meathod • Heat oven to 180 C/160 C fan/gas 4. Grease and line bases of 3 x 20 cm sandwich tins. Beat the butter, sugar, flour, eggs, almonds, yogurt, all the zest and half the lemon juice. Divide between the tins and bake for 20 -25 mins until a skewer poked in comes out clean (you may want to change the shelves around after 20 mins to ensure the cakes cook evenly). Mix the juice of the second lemon with 1 tbsp sugar, poke the cakes a few times with a skewer and drizzle over. Cool in the tins on wire racks. • Sandwich the 3 sponges together with 8 tbsp of the lemon curd. Brush the rest over the top and sides of the cake. Break off 50 g marzipan, then roll out the rest on an icing sugar-dusted surface until large enough to cover the cake. Cover the cake with the marzipan and transfer it to an upturned bowl or saucer on a tray, so the edges of the cake overhang the bowl, but it is stable. • Mix enough water into the fondant icing sugar to make a thick icing. Set aside a few tbsp, then mix some yellow food colouring into the rest. Spoon bit by bit over the cake, letting it dribble down the sides until the entire cake is covered (and excess has dripped off). • Knead pink colouring into half the marzipan and green into the other half. Roll out the green and cut out leaves. Use a cocktail stick to draw veins on. Press bits of the pink into long, flat sausages and roll up to look like roses. Put the reserved white icing into a food or piping bag. Snip the end and pipe fine squiggles over the cake. Add roses and leaves once the icing is almost set.
