Viability of selected probiotic in freeze dried mango juice powder Presented by Ozaybi Nawal BIOL 2230 MC 133 Food Science and Technology 2011 Supervisors : Liz Gorczyca and Dr Willis Owino 1
Introduction: probiotics What is a probiotic ? ? Probiotics are “live microorganism which when administered in adequate amount confers health benefits to hosts” (Liong, 2011). Probiotics are also known as friendly bacteria, due to the numerous health benefits that they have. 2
Benefits of probiotics 1. Aiding in Digestion Rivera & Gallardo (2010) Lowering p. H on the gut Prevent the growth of harmful bacteria 3
2. Remedial effects on a variety of diarrhea Wilson & Versalovic (2008) Reduces the duration of illness Reduces the risk of antibody associated diarrhea 4
3. Helping to maximize Immune function Malago (2011) Reduces the incidence of catching infections of the respiratory tract Increases the number of natural killer cell 5
Limitations / solution 1) 2) Low survival rate of probiotic flora during food processing condition. Low stability under storage SOLUTION **Freeze Drying and Spray Drying. Mani, Jaya, Das (2002) **Encapsulation of probiotics in polymer gels. **Design Modification of drying chamber. Kailaspathy(2002) 6
Limitations / solutions 3)Not all probiotics bacteria confer health benefits. SOLUTION **Select probiotic that known to have health benefit (i. e Lactobacillus. casei , Lactobacillus acidophilus Sekhon & Jairath. ( 2010) Google image(Lactobacillus spp. ) http//www. Innatebodybootcamp. com 7
Using Mango Fruit Instead Of Dairy product to carry probiotic 1. 2. 3. 4. Mango is a popular fruit in Asia. The allergy to dairy products. Lactose intolerance and the cholesterol content (Full fat ). Dairy products have short shelf life. Food Research International 41 (2008) 8
USING MANGO FRUIT MAJOR DISEASES OF MANGOES 7 Anthracnose, Sooty mould 9
Benefits of Mango Powder Mango powder used as the carrier of friendly microbes. Wilson & Versalovic (2008) 10
Objective Can probiotic survive in mango juice powder? Will freeze drying improve the survival of probiotic in mango juice? Can Encapsulation improve the survival of probiotic? 11
Examples of Probiotic Lactobacillus acidophilus Lactobacillus brevis L. bulgaricus, L. plantarum L. rhamnosus L. casei L. fermentum, L. caucasicus, L helveticus, L. lactis, L. reuteri Lactobacillus casei. Lactobacillus acidophilus Sekhon & Jairath. ( 2010) 12
Material and method Commercial mango juice Encapsulation materials Arabic Gum Probiotic cultures Alginate L. casei L. acidophilus 13
Material and method Probiotic preparation Mango juice (commercial) Encapsulation Centrifuge ( pure juice) Alginate Gum Arabic Integration with mango juice 14
Material and method Freeze dryer Mango Powder Shelf life (survival during storage) Assessment quality Survival of probiotic Quality of powder 15
Why Choose Freeze Dryer? Preferred method for transporting and storing micro organism strain types. Some strain showed the lowest decrease in viability after freeze drying. Freeze dried material allows easy and inexpensive shipping and Handling. The shelf life of freeze dried products is highly. The bacteria more tolerant to freeze drying. Morgan et al 2006
