What have we done? - Distribution of the budget of 400€ → Decide what we really need to buy → Difficult to plan ahead all the things to buy during the next 3 months - Find sponsors - Taxes

Taxes - Fermentation: no taxes - Production of schnaps: +/- 30 €/L for an alcoholic percentage=100 % 10 L of 40 % = 120 €

Recipe The first step is to prepare a yeast starter. → multiplying the yeasts → faster fermentation To prepare it, we need : -apple juice -water -nutrient salts -yeasts
Recipe The second step is to buy and press apples. The fermentation has to begin as soon as possible after this step. We must add : ● correct amount of sugar ● nutrient salts ● yeast starters Mix it twice a day CO 2 escapes
Fermentation First step : -Yeast are multiplying -It lasts some days Second step : -Yeasts will transform sugar into alcohol and CO 2 Third step : -Last sugar will be transformed
How to stop fermentation ? First way: There is no more sugar so the fermentation will end. Second way: The percentage of alcohol is too high and so yeast can’t develop any more.
Our final products ● Dry wine at 15 % ● Sweet wine at 17 % ● Wine for schnapps at 19 %

How to get the final product? Wine at 19% How to proceed? schnapps at 40 % distillation!
Goal of a distillation Distillation: heat the mixture and collect the condensed vapour Boiling temperature of ethanol = 78°C < Tb of water = 100°C vapour has a higher ethanol concentration because it evaporates earlier
40 L at 19 % First distillation must (yellow) 16 L at 38 % distillate (transparent)
Second distillation ● Smell ● Taste (don’t forget to dilute it before…) ● Separate ● You get your product ! 16 L at 38 % 5 L at 80 %
5 L at 80 % Dilution and bottling 10 L at 40 %
