New Winemaker Embraces Gary Farrell Legacy and Spirit of Innovation • Cool climate winemaking veteran Theresa Heredia joined on May 1, 2012. • The long-time winemaker at Joseph Phelps’ Freestone Vineyards in the Sonoma Coast, Theresa is a highly respected specialist in small-lot, single-vineyard Chardonnay and Pinot Noir. • She brought a hands-on Burgundian perspective to Gary Farrell Winery, having worked at Domaine de Montille in France. • Theresa has a keen appreciation for the acclaimed Gary Farrell Winery house style, which emphasizes elegance and balance. Her experience and passion for exploration, in the vineyards and winery, made her the ideal person to carry on this legacy, while bringing a spirit of innovation to the winemaking. ~ Evolution ~ Chardonnay Winemaking Under Theresa’s leadership winemaking protocols have evolved to achieve enhanced depth, textural richness and weight, using such Chardonnay techniques as: • Harvesting at slightly lower sugars in order to capture more varietal character, natural acidity and site specificity • Tailoring pressing program to specific vineyards and cluster morphology • Selecting lees to express the voice of each unique vineyard site once juice has settled • New cooperage - Chassin, Cavin, Ermitage, Ana Selection – with emphasis on light toast • Incorporation of oak puncheons (500 L) that facilitates integration of oak aromas and flavors • Concrete egg (476 gal) – NEW 2014! • Native fermentations when possible 10

~ Evolution ~ Pinot Noir Winemaking Under Theresa’s leadership Pinot Noir winemaking protocols have evolved to enhance depth, textural richness and weight: • Harvesting at slightly lower sugars • Extended maceration and 3 -5 -day cold soak to build structure / more complex flavors & aromas • % Whole Cluster Fermentation contributes tannin, backbone and spice • Saignee to achieve desired concentration, structure and balance • New cooperage - Chassin, Cavin, Ermitage, Ana Selection – with move towards to lighter toast • Oak Tank (5 ton) – NEW 2012! – for warmer, natural ferments and gentle extraction • Foot Treading – for more extraction without over extraction • Native fermentations when possible 11

Quality Enhancements We continue to invest in new equipment: • JLB 20 Basket Press NEW 2015! • Integration of press wine into the free run juice enhances the textural richness of our wines. • The Bucher JLB 20’s vertical pressing mechanism is much more gentle so it does not break many skins or seeds during pressing, resulting in higher quality press wine. • Incorporating higher quality press wine into the free run adds texture and structure. 13

Quality, contd. • • • Concrete Egg (476 gal) NEW 2014! • Wine circulates naturally during fermentation, creating excellent lees contact with the wine and generating slow, gentle movement of the lees during aging. • The egg shape forces more of the cap to remain submerged for long, gentle extraction. • The thickness of the concrete insulates to help maintain consistent temperatures • The concrete imparts minerality to the wine, which adds texture Oak Tank (5 ton) – NEW 2012! –for warmer, natural ferments and gentle extraction. Barrel Room Cooling System – NEW 2016! Prevents temperature fluctuation and premature aging. Will allow the wines to age longer and more gracefully. 14

Quality, contd. • • • Armbruster Rotovib Destemmer – Enables team to process grapes faster with a vastly higher quality output of predominantly whole berries. NEW 2013! Vibrating Sorting Table - Gentle yet effective at removing debris, especially tiny shot berries and severely dehydrated grapes, raising the overall quality of the grapes headed to the fermenters. NEW 2013! Second Incline Belt – In the past, the delivery system for getting white grapes to the press was the same as that used for sorting Pinot Noir. The new belt enables us to run both presses simultaneously avoiding long wait times and keeping the fruit fresh and morning-cool. NEW 2013! Steam Cleaner – Cleaner barrels = cleaner, more stable wines. NEW 2013! Additional Small Lot Blending Tanks – Allows more flexibility during racking, blending and pre-bottling activities.
