Chaque année , l´entreprise fabrique 2000 tonnes de caillés. • Společnost se jmenuje A. W. Loštice –jméno nese iniciály zakladatele firmy Aloise Wessla. Sýry jsou zde vyráběny od roku 1876. Každý rok je vyrobeno 2000 tun syrečků. • The name of the company is A. W, of Loštice. This company was established in 1876 by Alois Wessels. Each year, the company produces 2000 tons of cheese.

Les étapes de fabrication du fromage Výrobní fáze Making Olomoucké Tvaruzky: the various steps • • • Après avoir acheté le lait caillé, il est cassé puis malaxé et additionné de sel. Il est entreposé pendant une courte période dans des caves et on ajoute des agents de maturation et des régulateurs d´acidité. Après vient le décaillage, le fromage est mis en moule selon la forme désirée. Il est ensuite posé sur des claies, qui sont ensuite installées dans des salles de maturation. Then, the cheeses are stored on boards in the aging room. This ends the first stage of cheese ripening. Afterwards the cheese is packed.

Kolečka slepíme, obalíme v těstíčku: vejce, polohrubá mouka, mléko a sůl. Smažíme po obou stranách.
