NSW Department of Education Lemon Myrtle Lemon myrtle is a eucalypt and it has antiseptic, antibacterial, antifungal, antiviral, decongestant and calmative qualities. Source of calcium, carotenoid (for eye health), zinc, magnesium, vitamin A and E. The leaves can be used fresh, or dried and ground, and have flavour similar to lemon and lime. Lemon myrtle oil can be extracted from the leaves and used to flavour foods and for medicinal purposes. The leaves can also be soaked in boiling water (infused) to make a refreshing drink.
NSW Department of Education Davidson Plums There are many plums similar to the Davidson in appearance and nutritional value such as the Kakadu, Illawarra and Burdekin varieties. Davidson, Illawarra and Burdekin plums have twelve times the antioxidants of blueberries and are high in Vitamin C.

The caviar (seeds) have a zesty lime flavour and can be used instead of limes in recipes. The finger lime can also be used to make jams, producing a tangy flavour due to the high tannin level in the skin.
NSW Department of Education Native Mint Native mint is a small-leafed plant with a true mint aroma and flavour and can be used wherever mint is normally used in a recipe. It is also suitable for use as an infusion. Source of antioxidants, vitamin A, C and E, beta carotene and micronutrients- calcium, potassium, magnesium, iron and dietary fibre.
