Popcorn needs heat to pop--between 400 to 450 degrees Fahrenheit. Inside the kernel is starch and moisture. When heated, the moisture turns to steam, which builds pressure inside the kernel. The pressure increases until the kernel ruptures, turning the kernel inside out. Yum!
