Objectives • Define terms related to measuring recipe ingredients. • Identify uncommon methods of measuring recipe ingredients. • Explain steps to measuring recipe ingredients. • Describe how to level off dry ingredients and measure liquids at eye-level.
Measuring Equipment
Measuring by Weight • Scaling- to measure ingredients by weight • Most accurate way to measure • Zero out the tare weight • Tare Weight- the weight of the container holding the ingredient to be measured.
Pinch • Pinch - A measurement used on dry ingredients that is the amount you can pinch between your forefinger and thumb. It is less than a dash and equivalent to approximately 1/16 teaspoon.
Dash • Dash - A small amount of an ingredient equivalent to over 1/16 teaspoon but less than 1/8 teaspoon when measuring dry ingredients. A dash used to measure liquid ingredients equals approximately 3 drops.
Scant • Scant - A scant measurement indicates that you should use slightly less than the actual measure.
Heaping • Heaping - A term, used when measuring dry ingredients, indicating that enough ingredient should be added in the measure so that it heaps over the rim of the measuring cup or spoon.
Leveling Off Using the edge of a knife, or other flat tool, to run across the top of a measuring spoon or cup so excess ingredient is removed.
Measuring Flour • Stir, Scoop, Sweep (SSS) • Stir the flour to loosen it up • Scoop flour with a spoon into a dry measuring cup until it is heaping • Sweep to level off the cup with a straight spatula
Measuring White Sugar • Scoop sugar into a dry measuring cup and level off.
Measuring Liquids • Use a liquid measuring cup that is just big enough to hold the amount. • Set the cup on a flat surface and read the cup at eye-level • Eye Level: To have your eyes at the level where the measurement is being taken.
Measuring Brown Sugar • Use a dry measuring cup • Pack the brown sugar into the cup and level off
Measuring Butter • Use the guide lines on the wrapper • Cut with a sharp knife
Measuring Shortening • • Scoop into dry measuring cup Be sure to pack it so there are no air bubbles Level off Lining the cup with plastic wrap helps with clean up
