Agressivité des vins rouges Manque de fraîcheur Brettanomyces Macération grappe entière • Problématique : rapport gras/structure déséquilibré • Solution : Diminuer l’extraction de tanin et augmenter la prise de gras • Problématique : manque d’acidité / aspects sensoriels ou œnologique (SO 2 actif). • Lourdeur des arômes et amertume des vins blancs et rosés • Solution : production d’acidité en fermentation. • Problématique : pression brettanomyces dès le vignoble sur cépage et vin à forte teneur en acides phénols. • Solution : diminuer l’extraction d’acides phénols et enchainer les microflores positives. • Eviter les piqures lactiques à l’écoulage par ensemencement préfermentaire avec bactérie homofermentaire. • Risque Brettanomyces : redémarrage de fermentation rapide sans phase de latence.

Brettanomyces bruxellensis. Problème Brettanomyces : • Causes variétales (richesse en acides phénols) et viticoles (intégrité pellicule et micro-climat grappe – Barbin, 2006) ; • Causes œnologiques : phase de latence pré et post fermentaires non maîtrisées, traces de glucose-fructose (Gilis, 2003) ; Limites et contraintes en production : • Difficultés d’implantation des levures sèches actives classiques (Saccharomyces cerevisiae) vs autochtones ; • Fins de F. A. lentes et incomplètes sur raisins déséquilibrés (carences en Nass) ; • Variabilité de la sensibilité des souches au soufre actif (Curtin et al. , 2012).
