Breakfast START AT 7: 00 AM n n Wash your hands If the coffee has not been started, do so at this time. - Place filter into the basket and pour in the coffee packet - Slide basket into the machine - Turn burners to “on” - Do NOT add water - Place coffee pot onto the burner; brown lip is for regular coffee, orange is for decaf. - Press “brew” to start
Breakfast n n n TABLE PREPARATION The table will be pre-set with cups/saucers, and flatware. Assure the following is set on the table: - jelly - creamer - salt and pepper - sugar packets - syrup - honey You may need more or less items based on the residents’ food preferences.
Breakfast SET UP COOKWARE n n n Prepare area with needed supplies - fry pan - pan to poach eggs - utensils - toaster Set out cereal bowls, fruit dishes, small plates. Once set-up, assist residents with morning cares.
Breakfast PREPARE FOR COOKING n n After assisting residents with morning cares, return to the country kitchen. Un-lock the microwave by pressing and holding the “CLEAR/OFF” button for 5 seconds. Wash hands Take out any needed food items from the pantry and refrigerator. - eggs- bacon - cereal - butter - oatmeal - grapefruit - coffee cake / Danish
Breakfast PREPARE FOR COOKING n As residents come to the table, take their food requests in the order they arrive. n Serve juices and water Remember to serve beverages from the right with your right hand food from the left. n
Breakfast PREPARE FOR COOKING n n n Put on hair net Wash hands Put on gloves Gloves are to be worn when handling food products and when cooking/serving. You must change gloves/wash hands when handling dirty dishes, changing tasks, or giving resident care.
Breakfast n After hair net and gloves have been applied, begin cooking and preparing each residents’ order n Remember to serve the food to the residents from the left. Once the food has been served, offer coffee. Offer refills on beverages throughout the meal. n n
Breakfast HOW TO COOK A POACHED EGG n n n Bring water to boil in a small pot. Reduce heat to “simmer” setting or a gentle rolling boil. Crack the egg Gently empty the egg into the water Cook 2 ½ minutes for a soft egg, cook 5 minutes for a firm egg. Remove the egg from the water with a slotted spoon, put into bowl and serve.
Breakfast HOW TO COOK FROZEN WAFFLES AND PANCAKES n n Waffles may be microwaved according to package direction, or be toasted in the toaster on a medium setting. French toast sticks and Pancakes are to be placed in the microwave according to package directions.
Breakfast MEAL TRAY DELIVERY n n n n After residents in the dining room have been served, those eating in their apartments can have their meals prepared and served to them. Put paper place mat on tray Place beverages, condiments on tray along with the food. Cover hot food with insulated lid Fill out the charge slip for meal tray delivery and give the resident a copy. Return to the apt. to collect the tray Trays are to be washed in the HH dishwasher. Household trays are peach in color and remain in the HH. If resident wishes to keep any food/beverage items, transfer these items into resident’s dishware and remove facility dishes from the apartment.
Breakfast HOME LIKE ENVIRONMENT n n Encourage residents to linger at the table and talk / enjoy their coffee. Do not grab up dishes or “hover” over the table. This makes for an unpleasant dining experience and a rushed atmosphere.
Breakfast CLEAN UP n n n When it appears a resident is finished with their plate, POLITELY ask them if they are finished and if you may remove it. Remove dishes from the left side of the resident. Rinse dishes in the sink and place them in the dishwasher
Breakfast CLEAN-UP n n n Between 8: 00 and 8: 30 all hot breakfast orders should be completed and served. By 9: 00, all residents should be served breakfast. As residents leave the breakfast table, begin the clean -up process.
Breakfast CLEAN-UP n n Finish clearing the table, rinsing dishes and throw away placemats/napkins. Restock condiment bowls with jellies, sugar, creamers. Return all refrigerated items back into the refrigerator. Make sure all food items are dated. Throw away coffee filter/grounds. Empty and rinse coffee pots, place in the dishwasher.
Breakfast CLEAN-UP n n n Obtain delivered trays from resident’s apartments, place the dishes and the tray into the dishwasher. Fill the dishwasher dispenser with powdered soap, run the dishwasher. On the first of the month add rinse agent (i. e. Jet Dry) to the designated slot of the dishwasher.
Breakfast CLEAN-UP n n n Empty the toaster of crumbs, put away in the cupboard. Wipe out the microwave, stove top and burners. Lock the microwave by pressing and holding the “CLEAR/OFF” button for 5 seconds. Clean the table tops and counters using a bar towel and Dawn liquid detergent. Check chair arms and cushions, wipe down and brush off as appropriate.
Breakfast CLEAN-UP n n n n Record the refrigerator and freezer temps on the log sheet. Check and clean out the refrigerator, removing any outdated or nondated food products/beverages per posted expiration schedule ( 3 days). Run the garbage disposal with water running. Take garbage down to the laundry room garbage bin. Sweep floors as needed. Placed used bar towel in the band-box linen bag in main dining room. Obtain clean bar towel as needed from main servery on each floor.
Breakfast NEXT DAY PREPARATION n n n Wash hands. Set-up trays for apartment delivery to include: placemat, silverware, sugar, salt/pepper, beverage glass. Set the dining room table for the next day. Fill out the food list to re-order foods and take down to food service. Be sure to write hair nets and bar towels needed if supply is running low. Take completed food list down to Food Service by 10 a. m.
Breakfast NEXT DAY PREPARATION n n n Food service will fill your food list order and it bring it up to the floor in the afternoon to be put away Monday- Saturday. On Sundays, bring the food list down with you on lunch break midmorning and take the filled order back up when your break is over. Wash hands Put food away, checking the list to assure all food items were delivered. All food and drink items must be dated. Make any oatmeal as needed, label and date the containers. Dispose of any extra after 72 hrs.
