Ingredients 200 g plain flour 75 g brown sugar 50 g margarine 1 x 15 ml spoon golden syrup ½ x 5 ml spoon bicarbonate of soda 1 x 5 ml spoon ground ginger 1 egg glace cherries/currants and icing to decorate © British Nutrition Foundation 2006 www. nutrition. org. uk/cookclub

Method 1. Preheat oven to 180ºC or gas mark 4. Grease a baking tray. © British Nutrition Foundation 2006 www. nutrition. org. uk/cookclub
2. Sieve the flour into a mixing bowl. © British Nutrition Foundation 2006 www. nutrition. org. uk/cookclub

5. Gently melt the margarine, syrup and sugar together in a saucepan. Do not allow to boil. © British Nutrition Foundation 2006 www. nutrition. org. uk/cookclub
6. Add the margarine/syrup and the beaten egg to the flour mixture. © British Nutrition Foundation 2006 www. nutrition. org. uk/cookclub

12. Bake for 8 -10 minutes. Carefully remove from the tray and allow to cool thoroughly on a cooling rack. 13. Pipe icing on top to decorate. © British Nutrition Foundation 2006 www. nutrition. org. uk/cookclub
