EUROPEAN FOOD SAFETY AUTHORITY (EFSA) The EFSA is the keystone of European Union (EU) risk assessment regarding food and feed safety. 2
RISK ASSESSMENT Hazard identification Exposure assessment Qualitative and/or quantitative evaluation of the likely intake of biological, chemical or physical agents via food Identify the effects that are considered as adverse Hazard characterisation Quantification of the adverse effects. Risk characterisation Integrates information from exposure assessment and hazard characterisation into advice suitable for use in decision-making. 3

FOODEX 2 Food. Ex 2 is a comprehensive food classification and description system aimed at covering the need to describe food in data collections across different food safety domains. 7
FOOD CONSUMPTION DATA FROM DIETARY SURVEYS 24 -hrs recall Food diary An interviewer asks about the foods consumed by the subject in the previous 24 hours, and records all information (preferably to a dedicated software) Usually self reported method of dietary recording – the subject taking notes about her/his own consumption in a food diary (preferably real-time, so immediately after consuming a food) –> It can be also be followed by an interview 8

COMPREHENSIVE CONSUMPTION DATA The EFSA Comprehensive European food consumption database contains data: n 24 -hour recall or dietary record method n data collected at individual level n most recent data within each country n random sample at national level n different age classes, from infants to elderly n special population groups 10
MAGNITUDE OF THE CONSUMPTION DATABASE Number of Member States 25 Dietary surveys 60 Population groups 132 Subjects 119, 458 Different national food codes 170, 878 Different Food. Ex 2 codes Consumption records Last update in Aprile 2018 2, 523 12, 076, 637 11

SUMMARY STATISTICS Summary food consumption statistics : • country, • survey, • age group (from infants to elderly) • 7 levels of the Food. Ex 2 food groups (up to 2, 523) • Total population vs. consumers only • Chronic and acute consumption • in g/day and g/kg bw per day. http: //www. efsa. europa. eu/en/food-consumption/comprehensive-database 13
EFSA STRATEGY AND VALUES Independence EFSA aims to enhance the quality of its outputs by giving direct access to data and promoting the development of collaborative platforms in Europe and internationally, as well as fostering data re-use and innovation. Openness Scientific excellence Innovation 14
EXPOSURE TOOLS • Food Additives Intake Model (FAIM) 2. 0 • Feed Additive Consumer Exposure (FACE) FAIM and FACE are tools for estimating dietary exposure to food and feed additives, respectively. They allow users to estimate the mean and high level exposure for different population groups in several European countries. These tools are based on raw individual food consumption data, from the EFSA data warehouse. 15
