Design a healthy fruit dessert Task - Design a fruit salad. The fruit salad needs to: q be as ‘Healthy’ as possible – low in sugar and fat. q use a selection of fruit to help achieve the ‘ 5 a day goal’ q contain interesting flavour combinations. q include a range of textures and colours. q use seasonal fruits where possible. In order to complete this task the following aspects need to be researched : q What is healthy eating? q Which fruits are in season? q How food materials have particular functions in the fruit salad.

How can we stop this from happening? This can be done in a number of ways: Covering the fruit with a liquid. This liquid can be slightly acid e. g. lemon or orange juice. OR it can be a sugar syrup. Which is the best option and why? Cut fruit will turn brown this process is called enzymatic browning.
