Your Attention please! If during class and I am talking If I should stop and just look at you that means that students are talking and I will not continue until I have everyone's FULL ATTENTION I have all the time in the world and its your grade not mine. � Work quietly. Do not disturb others who are working in class. � PLEASE Do not interrupt our class with your Personal conversations. � Keep your hands to YOURSELVES at all times. � Please respect everyone's personal as well as school property
Goals � The goal of this course is to prepare students for restaurant employment. � This program focuses on broad transferable skills and stresses understanding and demonstration of the following elements; planning, management, finance, technical and product skills, underlying principles of technology, labor issues, community issues, health, safety and environmental issues. Each student will have the opportunity to participate in lab situations individually and within small groups. They will also have the opportunity to demonstrate skills required for day-to-day restaurant operations
Kitchen Uniforms Students will need to have full uniforms every time they go into the kitchen. Required to purchase from LMHS culinary program: http: //chefshelpingchefs. com/lmhs-4168/ Culinary 1 s, 2 s, 3 s, and 4 s - Hat, Chefs jacket � ALL CULINARY STUDENTS MUST CLOSED TOED SHOES WHILE IN THE KITCHEN. � Culinary competition team members must have(No EXCEPTIONS) hat, jacket, Nonslip shoes and black pants.
Daily Class Materials SUPPLIES: (Each Student Must Bring in each of these and have them during class EVERY DAY) � 1 -inch 3 Ring BINDER or COMPOSITION NOTEBOOK PENCIL, PEN, & SHARPIE � NOTEBOOK PAPER � CALCULATOR � ◦ NOT SCIENTIFIC Students are expected to have all supplies, by the end first week of school.
KITCHEN/CLASSROOM REQUIREMENTS: � � � � Each student is required to: � Attend class and show up on time please. � Participate in at least 3 before or after school events as necessary. � Wear appropriate shoes when working in kitchen area. � Wear appropriate hat or hair restraints when working in kitchen area. � Chefs jacket or Wear Café shirt when in the kitchen. /dinning room Must be in full uniform for any out side the school event or competition. � Read required text assignments. � Complete required worksheet assignments. � Participate in class discussions. � Participate in labs covering cooking, serving and cleaning procedures. � Participate in cooking, serving and cleaning assignments. � Keep a notebook containing assignments, handouts, and recipes pertaining to class.
CULINARY ARTS CLASSROOM/KITCHEN RULES � � � � The following rules are nonnegotiable Follow all safety and sanitation rules and regulations set by the state. Place your cell phone in proper numbered container in phone cabinet the cabinet will be locked before we start class and will be opened 10 minutes before class ends Your school I. D is part of your uniform you must have your I. D. around your neck at all times or you will lose 10 points for the day ( yes in the kitchen as well) Stay on task in the class room and your assigned station in the kitchen. NO HORSEPLAY –( FOR YOUR PERSONAL SAFETY) in the class room or kitchen. Please do not sit on the desk top or the kitchen counters because these surfaces are for dinning and food preparation. You must be in full uniform in the kitchen at all times which includes the following: Chefs jacket, hat , Long pants, and a pair of close toed shoe. NO OPEN TOE SHOES, SANDLES, FLIPFLOPS OR SLIDES WILL BE ALLOWED IN THE KITCHEN AT ANYTIME!
Rules continued: Ø Ø Ø Ø Ø There is ABSLOUTELY NO gum chewing in the class room or kitchen (you must place your gum into the trash can by the door when you come into the classroom NOT UNDER YOUR DESK!) All students that have long hair must have it tied up and under their hat ion the kitchen at all times. (This is a state sanitation regulation and must be followed) this includes Both Male and Female students. A ZERO will be given for a daily kitchen grade for: Not locking your phone in proper number cubby in the cabinet Excessive horse playing or behavior unsuitable a chef in training Not wearing any one of the following in the kitchen: hat, chefs jacket, long pants or proper shoes, Leaving your work area dirty, Failure to sign in, not following instructions and/or lack of effort. Incomplete / dirty uniforms
Consequences of breaking the classroom/kitchen rules � Warning and HIP form step 1 � HIP form step 2 plus Call Home � Pink Slip and HIP form � Sent out of classroom with referral � This includes dress code and ID violations � As well as cell phone usage and � Abuse of IPad rules.

Homework Assignments �I try to not give a lot of homework � Expected to spend 30 -45 minutes working on homework. � Homework is graded on completion and accuracy. ◦ If it is turned in on time and it meets the rubic standards you will receive a 100 � Late work will be accepted however 10 points for everyday late unless a student is absent. � Work more than 5 days late will be given a 59 in the grade book. Student will be responsible for making up work on their own time.
Classroom work Assignments � Classroom assignments must be turned in at by the end of the class period and will not be accepted after that day. � If you are absent on the day of a classroom assignment you will be able to make it up but you will need to do so on your own time not mine. � You are responsible for your work I will NOT come to you and ask for it you will need to come to me if you do not it will be a ZERO.
Interactive Notebook � Interactive notebook: we are switching to onenote and everything that you will need will be there for you to take notes I can check your note book in one note. � Or it can be a three ring binder that will be used for all notes assignments and Recipes and handouts you receive. � If an assignment is completed outside of the notebook it must be placed into it I will provide access to a three hole punch in the classroom. � The notebook will be collected periodically and graded based on completion 80% and neatness 20%.
Projects � Students will have at least one project each quarter. � Students will receive a rubric outlining the project requirements and how they will be graded. � Students will lose 10 points for each day the project is turned in late.
Serv. Safe Peer Coaches � This year I am trying something a little different � Any Student that passed Serv. Safe last school year is now a Peer Coach for the students that will be taking Serv. Safe this year. � This is a Student Led study group and they can meet in my classroom during lunch as long as they are truly helping the other students to study. � A Reward will be given out to a Peer Coach for each student that they help to pass the Serv. Safe test. � Once a student has passed the Serv. Safe test they too become a Peer Coach and can begin to start helping other culinary students.
The Culinary 100 Club � If any of my culinary maintains a perfect score of 100 for the semester(That means on the report card only) (progress reports do not count) they will receive a Culinary 100 club certificate as well as a coupon for 2 free lunches in the culinary café. � To receive this reward students must score a perfect 100 for every semester report card. � If a student maintains a perfect score of a 100 for all 4 report cards( I had 6 do it last year so it can be done) they will receive a special reward along with a yearly Culinary 100 club Certificate.
Please Remember job in the kitchen has equal importance…. cook…. dishwasher…. server. � Professionals jump in and do what is needed without being asked or told. � Students are to have proper attire in the kitchen at all times � Every � As we are trying to Mimic Real Life culinary Practices please keep in mind what you prepare for the café is not for your friends personal consumption. � A ZERO will be given for the day if a Student is missing any item(s) from your uniform.
Pink Slips ~ You don’t want one! Students will receive A pink paper for failure to follow the rules or the classroomkitchen procedures. � If you receive a pink piece of paper from one of the chefs this indicates you have been terminated from your culinary duties for 1 week. � During your termination you will be removed from the kitchen and must complete all the assignments on the Pink-Slip page by the end of the week in order to earn your weekly grade. � Failure to complete the assignments on the Pink-Slip paper will result in a Zero for the weekly grade and a second week of termination as well as a submission on your individual HIP form. �
Grading Scale 100 - 90 = A � 89 - 80 = B � 79 - 70 = C � 69 - 60 = D � 59 and below = F � Kitchen grade will be � based on participating � And 100 points= � 20 points per day for 5 days of participation In the kitchen.
Bellwork � Everyday when students enter class there will be a bellwork assignment on the board. � They are expected to have their notebook with them everyday in which to complete their bellwork assignments. � They must make up any bellwork missed due to absence.
Tardy to class � Any time a student is tardy they are expected to go to attendance and obtain a tardy slip to enter the classroom. Upon entering sign in on the sheet next to the door, place their pass in the envelope attached to the list and join the class without causing a disturbance.
Absence � If a student is absent or tardy and miss a lesson they are responsible for getting the missed bell work and notes from a classmate outside of class time. � Any handouts which a student misses will be placed in the file folders on the printer table in the front of the classroom. � Quizzes and tests may be made up as arranged with Chefs. � Students are ultimately responsible for completing any missed assignments, quizzes and tests. � I will not come to you and ask for what you are missing ITS YOUR RESPONSIBILITY to come and taslk to me!
Bathroom use: � Only 1 student at a time may leave the classroom to use the restroom once they have signed in and the daily announcements have been made. � Our class and kitchen time is extremely valuable and leaving class too often disrupts the learning and production of food in kitchen. � When students leave the classroom they must sign out on my form and receive the bathroom pass from me as well as sign back in once they have return on the bathroom sheet located at the printer table � Failure to comply will result in loss of privilege of leaving the classroom.
Cheating � Talking during a test or quiz, copying another student’s work or answers, and plagiarism are examples of cheating. � Cheating on any assignment will result in an automatic zero on the assignment, and second time is an automatic referral to administration.
Finishing Early � If a student finishes all Culinary assignments before class time is concluded they may read a book, complete work for another class. � This does not Include use of headphones or entertainment on personal devices. � Cell phones and IPods will be confiscated and given to administration. � Failure to surrender your device will result in administrative removal from classroom.
End of the class period Please remember that the bell does not dismiss class. The Chef dismiss’s the class. � The bell is only a reminder of the time. Students will have plenty of time to get to their next class if you go straight to class and you don’t stop don’t fool around. �
