Chapter 9 Safe Facility & Pest Control • Floors, Walls and Ceilings should be smooth & durable • Equipment • • Must meet NSF standards Must be nonabsorbent, smooth and corrosion resistant Easy to clean, durable and resistant to damage Floor mounted equipment must be 6” off floor Tabletop equipment on legs 4” high Dishwashers – use detergents and sanitizers approved by local authority dishwashers must be able to measure water temperature, water pressure and cleaning and sanitizing chemical concentration

If ventilation system is not working, condensation and grease will build up on walls and ceiling • Garbage – • Prep area garbage should be removed as quickly as possible • Trash containers must be leak proof, waterproof and pest proof and must be covered when not in use • Waste and recyclables must be stored separately from food and food-contact surfaces • Outdoor containers must be smooth, durable and nonabsorbent on asphalt or concrete. • Outdoor containers should be placed on concrete or asphalt.

Emergencies that Affect the Facility • The Local Authority (Health Department) must give approval to continue service when the following emergencies happen • Fire • Electrical power outages • Flooding • Sewage Backup • Broken water mains or the breakdown of the water treatment facility

EX windows, vents, cracks in floors, walls or ceilings 2. Deny shelter Empty garbage quickly Store recyclables as far away from building as possible Store all food and supplies correctly and as quickly as possible Clean up spills as quick as possible When you see any signs of pest notify you Pest Control Company immediately
