Landscape ◦ Teide National Park, Tenerife ◦ It is the most visited National Park in Las Fortunatas and in the country. The highest peak in Spain (3, 718 masl) stands, prevailing, in the center of the island of Tenerife. The Teide violet stands out. The landscape in this final part of the ascent to the volcano is of an almost lunar beauty.
◦ The Cueva de los Verdes, Lanzarote ◦ The cave was formed thanks to the eruptive activity of the La Corona volcano, thousands of years ago. ◦ For centuries, the island's inhabitants hid in its cavities in the numerous attacks of pirates and other invaders. In the 60 s of the last century, the Lanzarote artist Jesús Soto designed a play of lights and music and more than a kilometer of passages in the cave were arranged for them to be visited by the public. ◦ Stroll through galleries with ceilings up to 50 m high, contemplating the play of light and shapes carved out of the rock in ocher, green and reddish tones. Gastronomy ◦ Ropa vieja: ◦ In various parts of Spain ropa vieja are still a dish made from leftovers, especially meat and vegetables. On the islands, it usually includes frayed meat, legumes such as chickpeas, a little broth and various vegetables. ◦ Papas arrugadas con mojo ◦ It is possibly one of the most famous dishes of Spanish gastronomy, and of course of Canarian gastronomy. Wrinkled potatoes are simple potatoes, usually small in size, cooked with salt and lemon. Without removing the skin, they are dipped in a very traditional sauce called mojo picón, made with cumin, garlic, paprika, oil and vinegar. The mojo is usually red or green, the first being spicier than the second.
◦ Gofio is a highly nutritious cereal flour and very typical in the Canary Islands. It is a toasted flour. The beans are roasted to the stone in a completely natural process. It is very rich in fiber and very low in fat and although it usually serves as an accompaniment, there is no problem eating it at a dry pace between meals. ◦ Frangollo ◦ It is a kind of flan that is made from milk, lemon, eggs, sugar, butter, cinnamon and, especially, millet flour (corn). It is very nutritious and quite typical in festivities of all kinds, although at Christmas it has a special role.
Canarian language and outstanding writers ◦ In the Canary Islands there is a dialect, which has its own words and expressions, it is not homogeneous in all the islands, but each one has its peculiarityes in the language, compared to the rest of Spain. ◦ Benito Pérez Galdós ◦ Possibly one of the most famous Canary writers in history. Main representative of the literary current of Realism during the 19 th century. The importance of the impact of Galdós in literature is, today, studied in the main universities of the world, due to the separation of romanticism, at a time when reading served as the main inhibitor to the problems that were emerging in Europe.
