Remarks Ø The almond paste contains 50% sugar; therefore the sugar amount in the recipe is reduced. Ø Because of the thickening effect of the almond paste also the flour amount is reduced. Sprinkle the baking tins with sliced almonds after coating the tins with releasing agent. Decorate the cake with icing sugar after baking. Method Ø 1. Mix and whip up into an airy mass. Ø Add eggs gradually; whip up into an airy emulsion. Ø Blend in the sifted flour. – Baking temperature: 160°C – Baking time: approximately 50 minute

Method Ø Ø Heat “au-bain-marie” to approx. . 70°C. Crush bananas and heat up with 1. Into a firm whip. Warm-up and add at low speed. Siff and blend in. Ø Decoration: Glaze with yellow fondant or icing after cooling off. Remarks: An overripe banana gives more taste. – Baking temperature: 165°C – Baking Time: approx. 60 minutes

Method Ø Cream Part 1 until light and fluffy. Ø Add Part 2 in stages, cream well. Ø Add sifted Part 3 and mix gently. Ø Finally, add Part 4 and blend well – Baking temperature: 180°C – Baking time: 50 -55 minutes

Method Ø Beat cake margarine, Ø Add sugar till fluffy, Ø Add the egg slowly, Ø Continue beating till sugar dissolve, Ø Add flour and baking powder. Ø Mix till smooth. Ø Fold the fruits mixture in the batter. Ø Scale into the prepared oblong cake tin. – Baking temperature: 200°C – Baking time: 1 hr + 30 minutes
CHOCOLATE CAKE (ALL IN MIX) Ingredients Kg Salt 0. 030 Sugar 2. 250 Milk powder 0. 375 Baking Powder 0. 125 Cocoa powder 0. 500 Flour 2. 000 Whole Egg or Frozen 1. 500 Water Egg colour and flavour 1. 250
Method: Ø Sieve dry ingredients together. Break the margarine through the dry ingredient roughly. Ø Premix and add the liquids in a steady stream over approx. 1 minute at low speed. Ø Scape down bowl and whisk. Mix top speed for 1 minute only. Scale into desired shapes. – Baking Temperature: 200°C – Baking time: 30 minutes
CHOCOLATE CHIP CAKE Ingredients Kg Cake margarine 1. 000 Sugar 1. 200 Milk (lukewarm) 0. . 550 Baking Powder 0. 040 Eggs 0. 750 Chocolate chips 0. 400
Method: Ø Mix and cream airy at second speed with a flat beater. Ø Add gradually the eggs. Ø Add half the amount of milk. Ø Siff together and blend in at low speed. Add the rest of the milk. Ø Blend in chocolate chips.
Remarks The cake can be decorated with the chocolate fondant with some garnish on top of the cake. ØBaking temperature: 160°C ØBaking time: approx. 60 minutes.
