OVENS • Convection Oven - it contains a fan and exhaust system that a regular oven does not. The fan and exhaust help blow hot oven air over and around the food, then vent it out. As a result, this hot air surrounds the food so that it cooks evenly and more quickly.

• Deck or Rack Oven - it is a large oven into which entire racks full of sheet pans can be wheeled for baking. • Microwave Oven - is an electric oven that heats and cooks food by exposing it to electromagnetic radiation.

PREPARATORY TOOLS • Strainer - used to separate and break up clumps in dry ingredients such as flour. • Grater - is used to grate cheese, chocolate, and other fresh fruits.

• Pastry brush - is used in greasing pans or surface of pastries and breads. • Pastry tip - is a pointed metal or plastic tube connected to the opening of the pastry bag and is used to form desired designs.

• Pastry bag - also called pipping bag is used for decorating cakes, pies, cookies, and other pastries. Also used for squeezing doughs, batters, creams and pureed ingredients. • Pastry cloth - usually made of durable cotton canvass, a pastry cloth makes an excellent work surface for rolling out pie crusts, biscuits, cookies, and other doughs.

• Spatula - comes in different sizes; small spatula is used to remove muffins and molded cookies from pans which is 5 to 6 inches and large spatula for icing or frosting cakes. • Rolling pin - is used to roll out various types of dough and also works well in crashing crackers and breadcrumbs.

• Mortar and pestle - is used to pound or ground ingredients. • Timer - is used measure units of time for preparation of dough and in baking.

MEASURING TOOLS • Measuring cups • Measuring spoons - are graduated cups with fractions (1, ¾, 2/3, ½, 1/3, ¼, 1/8) marked on each side. - consists of a set of measuring spoons used to measure small quantities of ingredients.

• Measuring cups for liquid ingredients - it is made of transparent glass or plastic and is more accurate for measuring liquid ingredients. • Weighing scale - is used to measure ingredients in large quantities.

MIXING TOOLS • Mixing bowls - it comes in graduated sizes and has sloping sides and is used for mixing ingredients. • Wooden spoon - is also called mixing spoon which comes in various sizes suitable for different types of mixing.

• Rubber scraper - is used to cut and fold foam and butter as well as to gather every bit of dough from board or batter from a bowl. • Wire whisk - is used to beat or whip egg whites of cream.

• Electric mixer - is used in mixing, beating, creaming, whipping and kneading. • Rotary egg beater - is used in beating eggs or whipping cream.

CUTTING TOOLS • Biscuit and doughnut cutter - is used to cut and shape biscuit or doughnut. • Kitchen shears - are used to slice rolls and delicate cakes.

• Pastry blender - it has a handle with wire which is used to cut fat or shortening in the preparation of pies, biscuits or doughnuts. • Pastry wheel - small pastry wheel with plain cutting edge is used to mark and cut rolled-out pastry or cookie dough. Larger, plain edge wheel is used to cut pizza.

• Chopping board - a durable board on which to place ingredients for cutting. • Paring knife - is used to pare or cut fruits and vegetables into different sizes.

BAKING PANS • Bundt pan - it is a round pan with scalloped sides used for baking elegant and special cakes. • Custard cup - it is made of porcelain or glass used for baking individual custard.

• Tube center pan - deeper than a round pan and with a hollow center, it is removable which is used to bake chiffon type cakes. • Muffin pan - has 12 formed cups for baking muffins and cupcakes.

• Cake pan - it comes in different sizes and shapes and may be round, square, rectangular, or heart shaped. • Jelly roll pan - is a sallow rectangular pan used for baking rolls.

• Pop over pan - are used to bake pop overs. • Loaf pan - is used to bake loaf bread.
