FOG Language Hydro-Mechanical Grease Interceptor. A plumbing appurtenance that is installed in the sanitary drainage system to intercept free-floating (FOG) fats, oils and grease from the wastewater discharge. Continuous separation is accomplished by air entrainment, buoyancy and interior baffles. Gravity Grease Interceptor. A plumbing appurtenance of not less than 500 gallon capacity that is installed in the sanitary drainage system to intercept free-floating (FOG) fats, oils and grease from the wastewater discharge. Separation is accomplished by gravity during a retention time of not less than 30 minutes. Copyright PDI 2012
